Do these bags actually work, or is it a false sense of security?

Fair question, and the honest answer is partly both. A bag cannot make you un-robbable, and any brand promising that is lying to you. What front-carry does is remove the two things a pickpocket needs: a blind spot and an easy opening. It moves you from the easiest person in the carriage to one of the harder ones. That is a real effect and it is also the limit of the claim.
